Dutch Oven Cooking with Dee Dee

Through traveling across the country with her family and hosting mountain vacation rides, Dee Dee has become a Dutch oven cooking connoisseur. She has graciously offered to share some of her personal recipes and techniques for everyone to enjoy.
Some things to think about:

Most of all teach your children to cook and enjoy good, healthy food. This is not something they are born with naturally. I would prefer to eat a hot brownie covered in ice cream and homemade hot fudge. (watch for this recipe next month). People have never needed to be taught to eat a sweet but they do need to learn to like real food. All learning can be difficult but if you become a creative cook you can make it fun.
When I oil my dutch ovens I like to use bacon grease. I always save this in the refrigerator from my cooked bacon. If this is not available I like to use coconut oil. But if we are milking our Jersey cow then homemade butter is great too. When you're on a camping trip sticks of butter are what I use along with leftover bacon grease. Always oil a dutch oven prior to use. Even when you fry bacon or burger. This will cause your dutch oven pan to become like a tefflon pan.
All of these recipes are great indoors too. Remember always change a recipe to the way you like it. Don't make something just because . Adapt it so you will like it or find another recipe. Everything can be made by a box mix. But try to use fresh ingredients. Use food that doesn't have a single preservative added. Spice it up with herbs and seasonings. Check out www.bulkherbstore.com and use seasonings without preservatives too. They have a ton of books available that are very helpful.
One final thought: Have a big smile when you cook, be easy-going and relax. It is a great opportunity to serve your family and show them you care. Until next time may God bless the cowboys you feed!
Meal One:
BBQ Chicken Legs
Sweet Potato and White Potato Surprise
Almost Marie Calender's Cornbread
Additional Instruction:
When making this meal I will keep the chicken on the base. Next I will stack the potatoes
and then on top is the cornbread. I put them together in this order and when your cornbread
is done so is the rest of the meal. Remember your meal will continue to cook in these awesome
dutch ovens. The ovens were made to hold heat and that they do. Make sure your lid is on snug
you don't want any heat to escape.
Meal Two:
Easy Mexican Noodle
Our Favorite Biscuits
Additional Instruction:
Cook your biscuits on top of the Easy Mexican Noodle Bake. When your biscuits are done add the cheese to the top of the noodle bake, we always add more than 1 cup because we love it! For a special treat to your biscuits add 1 stick of butter to a 1/3 cup of honey, warm gently in a mini dutch oven. Heat until you can gently stir together. Serve and spread in the middle of hot biscuits.
Meal Three:
Dirty Rice
Mustard Sauce
Meal Four:
White Chicken Lasagna
Homemade Bread
Meal Five:
Dump Cake
English Muffin Sandwiches
Stir Fry with Rice
Meal Six:
Creamy Chia Tea
Thanksgiving Ham
Sweet Potato Casserole
Stuffed Mushrooms
Carmel Apple Pizza
